Ethiopia's Ministry of Agriculture has a department called CLU, which is responsible for the quality approval of exported coffee. The definition of coffee packaging grade is the main work of this department. CLU was introduced before ECX. Before ECX appeared, there were two export grades of washed coffee, namely G 1 and G2. There are three grades of sun-dried coffee, namely G3, G4 and G5. The higher the grade, the lowest sun exposure, so G3 is the highest grade. After ECX was established, the classification was redefined. The classification name of washed coffee has not changed, but G 1 appeared for the first time, which explains why G 1 and G2 Ethiopian sun-dried coffee appeared in the market, and G3 began to slowly withdraw from the market.
The classification method used in Ethiopia at that time was relatively old, and it was only classified according to the number of defects. The highest grade of water-treated coffee beans is 1-G 1, while the highest grade of sun-treated coffee beans is 3-G3. At present, the classification method is formulated by ECX, which is based on the combination of physical properties and cup fragrance characteristics to determine the series.
All coffee is defined as three types according to the treatment methods: 1, specialty (washed &; Not washed), such defects are few, and the taste quality of cup measurement is high; 2, commercial (washed & unwashed), this type can not reach the level of fine products, but it is higher than the domestic consumption level; 3、? Local/domestic (washed & unwashed), this kind of coffee has many defects (immature beans), and out-of-season and poor storage lead to relatively poor flavor.
At present, the specific classification and scoring standards of ECX are as follows: 1, the scoring definition of water washing treatment, in which physical properties account for 40% and cup quality accounts for 60%; 2. The scoring definition of Sun's treatment, in which physical characteristics account for 40% and cup quality accounts for 60%.
