Orange cake

Orange cake is a famous dish of Han nationality and belongs to Zhejiang cuisine. Soft texture and attractive color like a cake.

Raw materials: egg white, egg yolk, fine sugar, butter, low-gluten flour, high-gluten flour, oranges, rum, orange juice,

Exercise:

1. Wash the orange peel, peel it and soak it in boiling water for about 10- 15 minutes;

2. Cut the orange into filaments with a length of about 1-2CM.

3. Cut the butter into pieces and put it in a container and heat it to melt it into liquid.

4. Add orange juice and rum to the melted butter, wait for the butter to cool for a while, then add egg yolks one by one and stir well;

5. Mix the low flour and the high flour evenly, add them into the butter egg yolk after sieving, and stir them evenly with a rubber scraper to form egg yolk paste.

6. Add shredded orange peel into the egg yolk paste and stir well.

7. Add fine sugar to the egg white in three times, and beat the egg white with electric egg beater until it is hard to foam;

8. Add 1/3 protein into the egg yolk paste and stir evenly with a rubber spatula.

9. Pour 5 into the remaining protein paste and mix well to form a cake paste; Spread a layer of butter on the inner wall of the cake mold, and then sprinkle a layer of high-gluten flour;

10, turn the cake mold upside down and pat the bottom by hand to shake off the excess flour; Pour the cake paste into the mold and knock on the table a few times.
