Fenjiu is an ancient historical wine in my country, produced in Xinghua Village, Fenyang County, Shanxi Province. Where famous wines are produced, there must be good springs. Xinghua Village has inexhaustible high-quality spring water, which gives Fenjiu liquor endless vitality. Both Paoma Holy Spring and Gujing Spring have beautiful folklore and are called "holy springs". "Fen Jiu Qu" records that "the water in the new panning well beside Shenming Pavilion is slightly heavier than crab roe", and the annotation says: "The water in Shenming Pavilion well is excellent, and the water in the Shenming Pavilion is the best for making wine." Mr. Fu Shan, a patriotic poet, calligrapher and medical scientist in the late Ming Dynasty, once wrote the four characters "Dezao Huaxiang" for the ancient well in Shenmingting, which shows that Xinghuajing Spring is uniquely endowed by nature and the wine produced is like the fragrance of flowers that penetrates the heart and mind. To brew famous wine, you must have unique skills. The "Book of Rites of Zhou" records the six methods of brewing wine, namely: "The rice must be ready, the medicine must be seasoned, the fire must be clean, the water spring must be fragrant, the pottery must be kind, and the fire must be combined." This is the essence of the rice wine brewing method. In 1932, Mr. Fang Xinfang, a nationally renowned expert on microorganisms and fermentation, visited the "Yiquanyong" restaurant in Xinghua Village and summarized the brewing process of Fenjiu into "seven secrets", namely: "People must get the essence, and water must get it*" It is sweet, the song must be at the right time, the sorghum must be true, the pottery must be clean, the vat must be moist, and the fire must be slow" "steaming and cleaning twice" process.
