Historical Evolution Zhengmingzhai was founded in Tongzhi of the Qing Dynasty for three years (1864), and its founder was Sun, a native of Yexian County, Shandong Province. In my early years, my family was very poor. In the early years of Qing Daoguang (182 1), drought occurred in Ye County. Sun's father came to Beijing alone to make a living, borrowed some money from his fellow villagers and set up a wine beach in the meat market outside Qianmen. Business is getting better and better because of its honesty. Later, his son Sun was recruited to help with business. After a few years, he had savings and opened Zhengyanglou Restaurant in the east of Shantou Road in the south of Roucheng, dealing in dishes and wine, and his business was very prosperous. In the third year of Tongzhi (1864), in May, Zheng Ming's uncle Zhai shop opened in Meishi Street outside Qianmen. At the end of the Qing Dynasty, Chongyi praised Zhengmingzhai as one of the three famous cake shops in Beijing in Miscellanies of the Government and the Opposition since Daocheng. Just as the business between Zhengyanglou and Zhengmingzhai was booming, Sun broke down from overwork and returned to his hometown in Shandong to recuperate. Before he left, he entrusted his cousin Sun to take care of the shop. In the thirty-fourth year of Guangxu (1908), the bachelor went home to report his work to Ren Xue and asked some questions. Ren Xue was deeply puzzled by the bachelor's prevarication and vagueness. He hurried back to Beijing in spite of his illness. After auditing the accounts, there are indeed many loopholes. Ren Xue was very angry and wanted to kick the bachelor out of the store, but the bachelor refused to accept it and offered to break up. The lawsuit went all the way to Shuntianfu, and finally Ren Xue won the case and continued to operate Zhengmingzhai and Zhengyanglou restaurants. After 1937, the main raw materials, white flour and white sugar, were in short supply. Chef Yang, who was in charge of the case, developed food such as potato rolls and barely maintained his business. After 1945, prices soared, the currency depreciated, the market was depressed, and business was even more depressed. 1949, the store merged into Qianmen Street and was named Zhengmingzhai. 1956 Public-private partnership, with the active support of the state in terms of funds and raw materials, the production has been restored and developed. Legend has it that in the Qing Dynasty, there were two interesting stories about almond dry food and Zhuang Yuan cake. During the Qianlong period of the Qing Dynasty, a scholar studied hard and decided to go to Beijing to catch the exam. But her family is poor and lacks Sichuan resources. She went to Beijing in her senior year, and her mother was in great pain. She wants to make dry food delicious but not hard. So I borrowed wheat flour and oil sugar from my neighbor, mashed a little sweet almond in the flour and made it carefully. The scholar took his mother's dry food and worked hard to get to Beijing day and night. Later, he became the number one scholar and became an official in North Korea. Whenever he eats, he thinks that his mother's dry almond food is delicious, so his family often cooks dry almond food for him. Later, this snack was gradually introduced to the people. Zhuangyuan cake is another traditional product of Zhengmingzhai, and the word "champion" is engraved on the cake mold. Legend has it that during the Northern Song Dynasty, every year, tribute students from all over the country came to Kaifeng to take the exam, thinking of becoming the top scholar. In order to cater to the wishes of the candidates, a businessman made a cake with flour, oil, sugar and fruit as raw materials, named it "Zhuangyuan cake" to show that he won the first prize. As soon as the cake went on the market, it was immediately welcomed by the candidates and sold very well. Since then, when royal nobles welcome guests or marry women, they often take Zhuangyuan cake as the top grade. The production feature is that Zhengmingzhai can have a prosperous business in the competition, and its products have a long-standing reputation, with a history of 100 years, which is mainly manifested in:-good selection of materials and adequate feeding. The raw materials needed for Zhengmingzhai are strictly selected according to the formula. For example, peach kernel must be a thin-skinned walnut produced in Shanxi, and red dates should be small red dates in Miyun County, Beijing, sweet-scented osmanthus in Yunnan, and hawthorn in the suburbs of Beijing, Hebei. Quality and quantity must be guaranteed when feeding. For example, red and white moon cakes need 4 taels of oil per catty, and a certain amount of rock sugar should be added to honey for honey. When the honey supply produced by other families encounters warm weather, the honey will flow downwards and the honey supply will loosen itself. However, the honey supply in Zhengmingzhai, whether it is cold or hot, will not drop honey, will not loosen, and will remain unchanged. Second, meticulous work and strict quality control. Zhengmingzhai's cakes are made by the back cabinet (workshop) of the general number and the semicolon of Beiqiaowan, and distributed to all numbers for sale. Each back cabinet is equipped with 1 person who is responsible for handling the case, assisting the case and burning the furnace.
