Why is Daokou roast chicken with a history of more than 300 years not as famous as Beijing roast duck?

Many people may have heard of or eaten Beijing roast duck, but they have never heard of Daokou roast chicken. I have to say, Daokou roast chicken is not as famous as Beijing roast duck, but Daokou roast chicken, like Beijing roast duck, is a traditional food in China with a history of more than 300 years. The earliest Daokou roast chicken was formed in the eighteenth year of Shunzhi in Qing Dynasty. In fact, when Daokou roast chicken was formed, Beijing roast duck was already very famous.

Beijing Roast Duck originated in the Southern and Northern Dynasties in China. At that time, it was not called Beijing roast duck. People named this delicious food roast duck. Beijing roast duck has a high starting point. From the beginning, it was court food, which only the royal family could enjoy. Unlike Daokou roast chicken, it's a folk food. From the first crossing roast chicken to the next hundred years, it has not been well developed, so many people don't know the existence of this food.

Until the Qianlong period of Qing Dynasty, Zhang Bing, the inheritor of Daokou roast chicken, met Liu Yi, a good friend who worked as a chef in Qing Palace. With the help of Liu Yi, Daokou roast chicken is really famous. Actually, Liu Yi didn't do much. He just told Zhang Bing a recipe and added eight kinds of condiments to the water of roast chicken to make it more fragrant and strong.

The development of Daokou roast chicken can be described as twists and turns, but now this kind of roast chicken has finally come down. After more than 300 years, modern people can still eat roast chicken food developed by the ancients. It can be said that Daokou roast chicken is very famous in Henan and even in the north, but few people have heard of Daokou roast chicken in the south. Unlike Beijing roast duck, it is famous all over the country. In fact, the popularity of Beijing roast duck is related to two emperors in history, namely Zhu Yuanzhang and Judy in the Ming Dynasty.

It is said that Zhu Yuanzhang of the Ming Dynasty was able to eat a roast duck after he proclaimed himself emperor, which shows his love for roast duck. With this emperor as an example, the following people will naturally try their best to improve the recipe of roast duck. At that time, Beijing Roast Duck was also called Jinling Roast Duck, because the capital of the Ming Dynasty was now Nanjing in Jinling.

So how did this roast duck change from Jinling roast duck to Beijing roast duck? This will benefit from Judy, another emperor of the Ming Dynasty. Judy is the son of Zhu Yuanzhang. Like his father, Judy likes to eat roast duck. However, after Judy usurped the throne, she moved to Beijing, and at the same time took away a group of chefs who cooked roast duck. From then on, Beijing roast duck overtook Jinling roast duck and won the first place in the industry.

Although Daokou roast chicken tastes good, there are no two heavyweights, Zhu Yuanzhang and Judy, in the development of Daokou roast chicken, so the world's knowledge is limited, and the history of Beijing roast duck is relatively long, with 1000 years. In this respect, it is understandable that Daokou roast chicken is not as famous as Beijing roast duck.
