The Song Dynasty's Chronology quoted the Tang Dynasty's Four Seasons Mirror as saying: "There will be an eclipse of radish, spring cake, lettuce and a spring dish in beginning of spring." From the Song Dynasty to the Ming and Qing Dynasties, eating spring cakes became more and more popular, and it was recorded that the emperor gave spring cakes to officials in the spring. The Ming Dynasty's "Yan Dou Tour" contained: "In the early spring, (the emperor) gave Guan Bai spring cakes at the meridian gate." In the Qing dynasty, the stuffing of spring cakes was richer. Now, people prepare side dishes or all kinds of stir-fried dishes, and put them into the cakes at will when eating spring cakes. Beginning of spring eats spring cakes to welcome spring and pray for a bumper harvest.
The earliest spring cakes were put on a plate with food, called "spring plate". The record of the Spring Festival can be found in "Local Records" at the beginning of the Zhou Dynasty: "laity has no birthday, go to Pan. Five-hearted people are angry with the five internal organs. " The five spices here are spring vegetables. "Four Seasons Mirror" says that "there will be an eclipse of radish, spring cake, lettuce and spring plate in beginning of spring. In the Tang and Song Dynasties, the Spring Festival appeared on beginning of spring Day. Du Fu also has a poem "Fine Lettuce in Spring"!
