What kind of cake does Ningde Huotong eat in the summer?

A light cake

In the long summer in eastern Fujian, we mainly eat "light cakes" (flour baked with a little salt). Zhouning, Fu 'an and other places in eastern Fujian soaked the light cake in water and made it into dishes, while Jiaocheng, Fuding and other places cut the light cake in half and ate fried bean sprouts, leeks, meat and waste vegetables.

In Shouning County and Xiapu County, Changxia will eat "Changxia paste" on this day, which is porridge made by grinding rice into rice pulp and cooking it with minced meat, peas, dried vegetables, seafood and lily petals.

Every household in southern Fujian will also eat shrimp noodles. Red distiller's grains are often mixed in noodles and cooked by the whole family. Because the red distiller's grains are auspicious in color, they also have the function of fermentation, thus making people rich. Red distiller's grains are also helpful for digestion and health. Later, this custom evolved, and red distiller's grains were replaced by sea shrimp, which was called "eating shrimp noodles". Shrimp will turn red when cooked, the same color as red grain, as a wish for summer.
