Chinese yam

Yam, also known as yam, was originally called potato taro. It belongs to Dioscoreaceae and is a perennial plant. According to Compendium of Materia Medica, the name "Yu" is taboo. Turn yam into potato medicine. In the Song Dynasty, when the surname was Shu, the potato medicine was changed to yam.

Yam is shaped like radish. After peeling with chopsticks, the meat is white, and it is soft and delicious after cooking. Its tuberous roots can be used as medicine after peeling. Yam is cylindrical after processing, with yellow-white surface, smooth and hard texture, white powder in cross section, slightly sour and sweet, and sticky when chewing.

Yam is native to China, and is cultivated in all provinces in the north and south, especially in Huaiqing County. Dioscorea opposita, also known as sweet potato and ginseng, is the highest in China. "Shennong Materia Medica" said: "Yam is produced everywhere, especially in Huaiqing, Henan."

Yam contains soap alkali, mucus, allantoin, bile, arginine, amylase, protein, vitamins C, B, 4- dihydroxyphenylethylamine and so on. Mucus contains mannan and phytic acid. The difference between yam and iron stick yam

Morphological discrimination: "iron stick yam" can be divided into clay yam and sand yam.

Among them, clay yam is short and its appearance is not very straight. However, because the clay is hard, the yam with clay has a hard texture, good taste and high nutritional value. Yam in sandy land is generally longer than yam in clay land, and its appearance is relatively straight. The sand is empty, so the yam in the sand is moist, its taste is not as good as that in clay, and its nutritional value is lower. But these are all relative. After all, it is still "iron stick yam", and its nutritional value is much higher than that of ordinary yam or foreign yam.

According to the analysis results of Chinese Academy of Sciences, Tiegun Yam is rich in 16% starch, mucus, glycoprotein, choline, vitamin C and mannose. It also contains 18 amino acids such as glutamic acid, tyrosine and alanine, and more than ten trace elements such as iron, calcium, zinc, phosphorus, manganese, cobalt and copper. The content of effective components is much higher than that of yam.
