It is said that the "Buddha jumps over the wall" originated in the light years of the Qing Dynasty and was cooked by Zheng Chunfa, a restaurant in Juqingyuan, Fuzhou. Zheng Chunfa was a chef in Zhou Lianfu, the chief secretary of the general office of the Qing government in his early years. One day, Zhou Lian was invited to dinner by the boss of Guan Bank before Vietnam War. The boss of this bank is a good cook, imitating the ancients to cook in a jar. Zhou Lian tasted it and was full of praise. After returning to the office, he asked Zheng Chunfa to imitate it and give it a try. Together with Zheng Chun, I sent it to the bank to find out before the official month. After I returned to my official position, I carefully studied the stewing process of the altar and added delicacies, winter bamboo shoots and mushrooms. After many processes, it was carefully boiled with Shaoxing jar and finally made successfully. The taste is much better than that cooked by the proprietress of the bank. Zhou Lian tasted it and praised Zheng Chun. Later, Zheng Chunfa dismissed his official chef and opened the "Juchunyuan" restaurant to cook the stew he developed for several years.
At that time, several scholars heard that Juchunyuan restaurant had delicious dishes with various flavors, and they all gathered in Juchunyuan to have a taste. When the official held out an old jar of wine, many scholars laughed at how this jar of wine could produce delicacies. When the waiter opened the jar cover, he suddenly smelled a strange smell, and the scholars were crying before eating. One by one said that this dish had never been eaten, and it was really delicious. They clapped their hands and praised it: Wonderful! Wonderful! Even if the Buddha smells incense, he will break the ring through the wall. The scholars learned that the dish had not been named, so they rushed to compose poems and sentences. The last two sentences of a poem are: "The altar is full of meat fragrance floating around, and the Buddha has abandoned Zen and jumped over the wall." Since then, this dish has been named "Buddha jumps over the wall".
