Baiqian in Luoyang
Luoyang swallow dish is a unique flavor dish in Luoyang. According to legend, when Wu Zetian lived in Luoyang, a radish with dozens of pounds grew in a vegetable field in Dongguan. The vegetable farmers thought it was a magical thing and gave it to Empress Wu Zetian. The chef shredded it, steamed it with flour, and served it with delicious soup. After the queen ate it, it was delicious. The bird's nest was full of flavor and full of praise. It was named "Chae Yeon". Later, it was introduced to the people. Over time, everyone called it "Luoyang Chae Yeon" and it has been passed down to this day. Premier Zhou Enlai accompanied Canadian Prime Minister Trudeau to visit Luoyang. Famous chefs Wang Changsheng and Li Daxiong carefully cooked Yan cuisine and entertained the two prime ministers. The Prime Minister ordered two dishes in a row and praised them in unison after eating. Because there are peony flowers carved in the dish, Premier Zhou humorously called it "Peony Swallow". Since then, Luoyang's "Peony Swallow Cuisine" has been well-known at home and abroad.
