What is Fenjiu?

The historical origin of Fenjiu:

Fenjiu is an ancient historical famous wine in China, produced in Xinghua Village, Fenyang City, Shanxi Province. When the name of Fenjiu originated needs further research, but as early as 1400 years ago, the name "Fenjiu" already existed here.

According to the Book of the Northern Qi Dynasty, Wu Chengdi and Gao Zhan of the Northern Qi Dynasty said in a poem written by Jinyang to Wang Xiaoyu of Kangshu, Henan Province, "I'll drink two cups of Fenqing, and advise you to drink two cups at your own expense." In the Song Dynasty, Beishan Jiujing recorded "dry wine produced in Fenzhou in Tang Dynasty", and the "wine list" included "the most famous Ganlu Hall in Fenzhou in Song Dynasty", all of which were about Fenzhou Fenjiu.

After the Song Dynasty, due to the progress of alchemy technology, China first invented distillation equipment. 1975 The steel cauldron unearthed in Qinglong County, Hebei Province proves that distilled liquor existed in China at least in the Song Dynasty. China's liquor, including Fenjiu and other famous wines, evolved from yellow rice wine.

Xinghua Village has inexhaustible high-quality spring water, which gives Fenjiu endless vitality. Both Ma Paoshen Spring and Gujing Spring have beautiful folk stories, which are called "Shenquan". In Fenjiu Qu, it is recorded that "there is a new well next to Shen Mingting, and the water is vaguely crab yellow", and the annotation says: "Shen Mingting has excellent well water and heavy wine making."

Mr. Fu Shan, a patriotic poet, calligrapher and physician in the late Ming Dynasty, wrote four characters for Shen Mingting's ancient well, which shows that the apricot blossom Jingquan is unique and the wine brewed is as refreshing as flowers. Brewing famous wines requires special skills.
