The feed structure of pig farm is simple and the variety is very single, so it is difficult to realize the feed diversity of rural family pigs. Therefore, many nutrients of pigs fed with this feed are not satisfied, which leads to the lack of many nutrients in the growth process of pigs, resulting in the color of pork inconsistent with that of rural local pork.
② The color of pork changes with the feeding time of pigs. Rural families generally keep a pig for one year. The growth rate of raising pigs in rural families is not as fast as that in pig farms. Therefore, the longer the rural family raises pigs, the richer the nutrition, and the more mature the growth and development of various tissues in pigs. This kind of pork is of good quality. The longer pigs grow, the better the quality of pork. The time of raising pigs in pig farms is half that of raising pigs in rural families. Therefore, the growth cycle of this kind of pigs is short, the organs and tissues in pigs are tender, the meat quality is tender, and of course the color is relatively light.
③ The color of pork varies with pig breeds. At present, the pigs raised in pig farms are all high-quality pig breeds with very fast growth rate. This shortens the production cycle of raising pigs. Moreover, raising pigs in rural areas is to feed some local pigs, not those high-quality varieties of pigs in pig farms. Therefore, the slow growth and development of pigs is one of the reasons why the color and quality of pork are different. Another reason is that the variety of pigs and the color of pork are different. Generally speaking, the pork color and quality of rural local pigs are darker than those of high-quality pigs fed by pig farms.
The pigs raised by rural families are all bred for a long time, and there are many kinds of feed. Pigs are rich in nutrition, the organs and tissues of pigs are sound, and the quality of pork is relatively mature. The fat content of pigs raised by rural families is very high, and the heme content of lean meat of pigs is very high, so the color is very dark, very conspicuous and shiny. This is the most important feature of local pigs and pork raised by rural families.
There are also pigs raised in pig farms. Because of the short growth cycle, short feeding time and quick slaughter, and because of the single feed type, there are few nutrients obtained in pigs, and the organs and tissues of pigs are still in a tender state. This leads to poor quality and color of pork. Pigs raised in pig farms are all excellent varieties with very fast growth rate, lean pigs. The pork grown by pigs has little fat content, but high lean meat content and light color. This is the most important feature of pork raised in pig farms.
