2. Chicken source: Huaibei Maji is selected from Suzhou City, Huaibei City, Bozhou City, Guzhen County, Anhui Province, and the south of Tongshan County, Jiangsu Province. Feed chickens are adult healthy and tender live chickens that have passed the inspection and quarantine in the current year or the following year.

Traditional recipes stipulate that ingredients must be complete and authentic. Braised Fu Liji roast chicken is applied to the recycled chicken soup circulating in the industry. Soup should be fragrant, transparent and not corrupt.

Live chickens have to pass inspection and quarantine. After drinking water and resting, kill it quickly. Blood should be drained and scalded, and the chicken is white behind the net. The shape is round and full, and the appearance is persimmon yellow or bordeaux after rinsing, wet drying, caramel coating and frying.

(4) Quality characteristics.

Oval, tender and smooth, rotten and boneless. The whole chicken is bright in color, moderately salty, delicious in flavor, unique in taste and fragrant in food. Producers within the protection range of geographical indication products of Fuliji roast chicken may apply to Suzhou Bureau of Quality and Technical Supervision for the use of "special signs for geographical indication products", which shall be announced and approved by the AQSIQ.
