Third step
There are two kinds of light cakes unique to Fujian. This is Jian 'ou light cake with no hole in the middle. Rich flavor. Heat the cake before you sandwich the meat, but don't get it wet.
Fourth step
Fry the marinated pork belly slices in oil, put the meat aside, add minced garlic and stir-fry until fragrant. Then stir-fry the distiller's grains with 3 spoonfuls of monascus. If it is too sticky, add a little water, then add sugar and salt to taste. When the red distiller's grains are collected and hung on the meat, they can be cooked.

The heated light cake is cut with a knife and the meat is sandwiched in the middle. Eat it while it is hot.
