What is Yangchun noodles?

"Yangchun noodles" originally refers to a kind of noodle soup without any topping, which is called "clear soup slippery noodles". It was one of the most popular noodles in Shanghai in the old days (it could also be used as a staple food).

Later, because merchants and others taboo unlucky words such as "Qing" and "Guang", some people chose Yangchun in the ancient music title "Yangchun" and renamed it "Yangchun Noodles". The method of making this kind of noodles is very simple. Put the hot noodles in a miso soup bowl and decorate with chopped green onion. Speaking of popular breakfast in Shanghai, many people often associate Yangchun noodles and other cakes, fried dough sticks, rice and soybean milk called "four donkey kong", and classify them as ordinary breakfast to show their low grade. There are two kinds of Yangchun noodles: wide soup noodles and crossing the bridge rice noodles. The former refers to a bowl with more soup and less noodles, while the latter refers to a bowl with less soup and more noodles. After the opening of Shanghai, many noodle restaurants improved the soup of Yangchun noodles, boiled with meat and bones, and also used fresh fish to make the soup rich and delicious. At that time, famous restaurants in Shanghai, such as "Boss's Restaurant" and "Four Seasons as Spring", were all good places to eat Yangchun noodles.
